This competition episode of Chopped is titled "Sunny Side Apps" hosted by Ted Allen. The judges for this episode are: Maneet Chauhan, Amanda Freitag, and Aaron SanchezÂ—excellent chefs in their own right and who also appear on many other cooking shows.
The chefs competing in this episode are: Tony Kang, sous chef at Brookville Country Club in Upper Brookville, NY; Brian Howard, executive chef at Comme Ca in Las Vegas, Nevada; Jesse Kramer, co-owner and executive chef of Brooklyn Taco Company, in New York, NY; and Cory Bahr, executive chef and partner at Restaurant Cotton in Monroe, Louisiana.
In the first round their challenge was to make an appetizer in 20 minutes with the four mystery ingredients: corned beef, gummy fried eggs, black olives, and baby corn. Tony made smoked corned beef with sweet and sour corn sauce using curry, cumin, and Dijon mustard. Brian made corned beef taco with black olive tabbouleh using mint, cilantro, and jalapeÃ±os. Jesse made corned beef salad with gummy egg vinaigrette using parsley, cilantro, and cider vinegar. Cory made pan-roasted corned beef over vegetable hash using basil, molasses, and truffle oil. Jesse was the chef eliminated from the first round.
For the entrÃ©e round the ingredients were; Striped Bass, Sour Lemon Candy, Jerusalem Artichokes, and Cream of Mushroom Soup. Tony made striped bass and mushroom fritters using buttermilk, ginger, and chili powder. Brian made striped bass with sun chokes three ways using dashi, cider vinegar, and African peanut oil. Cory made striped bass with Vietnamese salad using lemon grass, mushrooms, and mint. Brian was the chef who was "Chopped" because his fish was very undercooked.
The last two chefs had spearmint leaf candy, knodel, almond flour, and raisins-on-the-vine. Tony made chocolate chip cookie with knodel gelato using buttermilk, goat cheese, and chocolate chips. Cory made Grandma's bread pudding using bread, eggs, and heavy cream. The winner of the $10,000 prize and bragging rights was Cory Bahr.
